Here is the recipe for the Breakfast Cookie that we got tonight, in case anyone wants to run right out and make it.  I can scan all the recipes tomorrow when I get to work and link them in here somehow, if I can figure it out.

Breakfast Cookie

Ingredients
1-1/2 c. brown sugar
2 c. quick oats
3 c. all purpose flour (or half whole wheat and half all-purpose)
1 tbsp. baking soda
1 tsp. baking powder
1 tsp ground ginger (or cinnamon)
1/2 tsp ground gloves
1/3 c. ground flaxseed
1/3 c. ground almonds
1/3 c. wheat germ
1/4 c. canola oil
1/2 c. applesauce
1/4 c. water
3 eggs
1-1/2 tsp vanilla extract
1 c. golden raisins

Directions
1.  Preheat oven to 350F.  Line two cookie sheets with parchment paper.
2.  In a large bowl mix together sugar, oats, flour, baking soda, baking powder, ginger, cloves, flax, almonds and wheat germ.
3.  Make a well in the centre and add canola oil, applesauce, water, eggs and vanilla.  Mix until well blended.
4.  Stir in raisins.
5.  Scoop out golf ball sized cookies onto cookie sheets.  Flatten with the back of a spoon.  Cookies will not spread when baked.
6.  Bake for 8-10 minutes
7.  Once the cookies have cooled, individually wrap the batch and freeze for a quick breakfast or snack. 

Nutritional information:  159 calories for 1 cookie, 30g carbohydrates; 5g protein; 3g fat

As it ended up I didn't get the recipes.  Won't have to wait for Ashley to email them now.

And I forgot to bring the other recipes in and scan them today.  I will try and remember them tomorrow and post them then!
